Ingredients

Serves 3–4 (makes about 22–23 pieces)
  • 10.5 oz (300 g)ground chicken
  • 5.3 oz (150 g)silken tofu
  • 1/2onion (about 3.5 oz / 100g)
  • 2 tablespoonspotato starch (about 16g)
  • 1 tablespoonsake (about 15ml)
  • 1 teaspoongrated ginger (from a tube or freshly grated)
  • Salt and pepper, to taste
  • For the sauce:
  • 3 tablespoonsmentsuyu (double strength, about 45ml)
  • 1 teaspoonsugar (about 4g)
  • 1 teaspoonsoy sauce (about 5ml)
  • 1 teaspoonmirin (about 5ml)

Steps

    Finely chop the onion.

  2. 2

    Add all the tsukune ingredients to a bowl (no need to drain the tofu) and mix well until the mixture becomes sticky.

  3. 3

    Heat oil in a frying pan. Scoop the mixture with a small measuring spoon, shape into balls, and place them in the pan.

  4. 4

    Tip: Lightly oil the measuring spoon for easier shaping. If using a 10-inch (26cm) pan, cook in two batches if needed.

  5. 5

    Turn the heat to medium and cook until browned on one side, then flip them over.

  6. 6

    Once lightly browned, sprinkle 1 tablespoon sake (not listed in ingredients) over the tsukune, cover with a lid, and cook on low for about 2 minutes.

  7. 7

    Remove the cooked tsukune and repeat with the remaining mixture.

  8. 8

    Wipe the pan clean, add the sauce ingredients, and bring to a boil. Return all the cooked tsukune to the pan and simmer in the sauce.

  9. 9

    Turn the tsukune a couple of times to coat them evenly. When the sauce thickens and becomes glossy, transfer to a serving plate.

  10. 10

    These are small-sized, making them perfect for lunchboxes. I freeze them in small portions for later use.
