Ingredients

Makes about 40–50 pieces
  • [Akashiyaki]
  • 1 2/3 cupscake flour (about 200 grams)
  • 3medium eggs
  • 3 1/3 cupswater (about 800 ml)
  • 1 tablespoonchicken bouillon powder (or chicken soup base)
  • 1 tablespoonlight soy sauce
  • as neededOctopus,
  • [Dashi Broth]
  • 1 2/3 cupswater (about 400 ml)
  • 1 tablespoonJapanese dashi powder
  • 1 tablespoonlight soy sauce
  • 1 tablespoonmirin
  • Slightly less than 1 teaspoon salt
  • as neededChopped green onions,

Steps

  1. 1

    Sift the cake flour into a bowl. Add the eggs and water, and mix well.

    In a small dish, microwave the chicken bouillon powder with 1 tablespoon of extra water for 20 seconds to dissolve. Add this and the soy sauce to the flour mixture and mix well.

    Strain the mixture through a sieve to make a smooth batter.

    Cut the octopus into bite-sized pieces (about 1/2 to 2/3 inch cubes).

    In a pot, combine all the dashi broth ingredients except the green onions and bring to a boil. (In summer, you can chill the broth for a refreshing option.)

    Heat a takoyaki pan and brush with vegetable oil. Pour in the batter and cook as you would for takoyaki.

    Dip the cooked Akashiyaki into the broth from step 5 and top with chopped green onions to serve.

    If you make a lot and have leftovers, you can freeze them! They're delicious even without the broth.
