I created this dish using vegetables I had in the fridge, aiming to make something my family would enjoy. Initially, I considered deep-frying the eggplant, but settled on this method.

I created this dish using vegetables I had in the fridge, aiming to make something my family would enjoy. Initially, I considered deep-frying the eggplant, but settled on this method.

Cut the eggplant into large bite-sized pieces, sprinkle with salt, and let sit for 10 minutes. Rinse quickly with water and pat dry thoroughly with paper towels.

Cut the bell peppers into pieces about the same size as the eggplant.

Add vegetable oil to a frying pan and heat. Once hot, add the eggplant.

Cover and cook over medium-low heat until the surface is nicely browned (flip halfway through).

When the eggplant is about 70-80% cooked, add the bell peppers and garlic. Cover again and cook for a few more minutes.

Once cooked to your liking, use paper towels to absorb excess oil from the pan, add the ● ingredients, and mix lightly.

When it sizzles, thicken slightly and it's ready to serve.
