You can easily make these using pancake mix. These dorayaki are fluffy and moist.

Crack the eggs into a bowl and beat well. Add the sugar and mix thoroughly with a whisk. Add the honey and continue mixing until slightly frothy.

Add the pancake mix to the bowl and gently fold with a spatula until just combined and no dry flour remains. Gradually mix in the water until the batter is smooth.

Lightly oil a skillet with a paper towel and heat over low. Pour in about 2/3 of a ladle of batter, cover with a lid, and cook until bubbles appear on the surface. Flip and cook briefly on the other side.

Pair up the cooked pancakes in twos and cover loosely with plastic wrap to keep them from drying out. Once slightly cooled, sandwich sweet red bean paste (anko) between each pair to finish.

For a delicious variation, try sandwiching sweet red bean paste and matcha whipped cream, then chill before serving. (Makes 3 servings) For the cream: Whip 1/4 cup heavy cream (50g), 3 tablespoons sweet red bean paste (50g), and 1/2 teaspoon matcha until soft peaks form.
