I love taiyaki, so I bought a taiyaki mold for my Vitantonio! After making it many times, I finally perfected a recipe that’s just as good as the ones from street stalls.

In a large bowl, combine the flour, baking soda, and sugar. Mix well with a whisk.

Add the water and milk all at once. Whisk until the batter is smooth and no lumps remain.

Once the taiyaki mold is hot, brush it with oil and pour in enough batter to fill about half of each mold.

Add the sweet red bean paste, then cook until small bubbles form around the edges.

Pour more batter over the filling to cover the red bean paste.

Close the mold and cook for about 5 minutes.
