For Saturday brunch, i thought about banana fritter but it is too fatty. Then I changed my mind to banana pancakes instead. More healthier.

For Saturday brunch, i thought about banana fritter but it is too fatty. Then I changed my mind to banana pancakes instead. More healthier.

Mash the banana with fork. Add egg and sugar. Mix it well.

Add the yogurt. Then add the flour, salt and baking powder. Because the banana has some juice, I don't add milk or water anymore. Mix it well.

The consistency of the batter should not be too watery. It should be a bit thick or lumpy.

Heat your non-stick pan. Add a dash of oil, swirl around the pan, wipe it up.

Add a laddle of batter into the pan. Cook it with low heat for 3 minutes. You may cover your pan to cook it quicker.

Open the lid. When the top side of pancake looks firm. You may flip it over. Cook for another 2 minutes.

Transfer the cooked pancake to a plate.

Continue with the rest of batter. You may add a dash of oil to the pan and wipe it off before putting another batch.

Garnish your banana pancake with honey or maple syrup or mixed berries
