Ingredients

16 Servings
  • Large mixing bowl of stale bread broken up approx 1.5lbs
  • 1.5 pintssemi skimmed milk
  • 3eggs
  • 6 ozbutter
  • 500 gramsmixed dried fruit
  • 250 gramsdark muscovado sugar
  • 2 teaspoonsmixed spice
  • 1lemon rind grated
  • tinButter for greasing large baking

Steps

    Pour the milk onto the bread and leave to soak for approximately 30 minutes or until milk soaked in and you can mash the bread up with a spoon.

    Beat the 3 eggs in a jug and then add to the bread mixture.

    Add 500 grams dried mixed fruit.

    Grate the lemon rind carefully from the lemon, use a fine grater if possible.

    Add lemon rind to mixing bowl.

    Next add 250 grams of dark muscovado sugar.

    Add two heaped teaspoons of mixed spice, then stir all the ingredients together thoroughly.

    Meanwhile in a saucepan on a very, very low heat melt 6 oz butter, do not boil.

    Add melted butter to other ingredients.

    Stir thoroughly again.

    Grease a large roasting tin with the extra butter.

    Pour mixture into the tin and then place the tin into the coolest part of your oven, Gas mark 4, 350 degrees Fahrenheit or 177 degrees Celsius for 1.5 to 2 hours.

    When risen slightly and golden brown take out of the oven and sprinkle with castor sugar whilst still hot.

    When cooled, cut into 16 squares. Lovely served warm or cold, stores well in an airtight container.
