This is so delicious, you'll want extra rice. If you have leftovers, make a sandwich with teriyaki chicken and lettuce in a roll for lunch the next day. Be careful not to overeat!

Ingredients

Serves 2 to 3 servings
  1. 2boneless, skinless chicken thighs
  2. Potato starch (as needed)
  3. 2 tablespoonssoy sauce
  4. 3 tablespoonssugar
  5. 2 tablespoonsmirin (sweet rice wine)
  6. 3 1/2 tablespoonssake (about 50 ml)
  7. 3 1/2 tablespoonswater (about 50 ml)

Steps

  1. 1

    In a bowl, mix together the soy sauce, sugar, mirin, sake, and water.

    Cut the chicken into 1-inch (about 3 cm) pieces and coat with potato starch.

    Fry the chicken pieces in oil until golden brown.

    Heat a frying pan, add the fried chicken and the sauce mixture, and simmer until the sauce thickens.
