Ingredients

Makes 9 oval-shaped breads, about 4 inches (10 cm) each
  1. Bread Dough
  2. 1 2/3 cupsbread flour (about 200 grams)
  3. 1 tablespoonsugar (about 15 grams)
  4. 1/2 teaspoonsalt (about 2 grams)
  5. 1 tablespoonbutter (about 15 grams)
  6. 3 1/2 tablespoonsmilk (about 50 ml)
  7. 1/3 cupwater (about 80 ml)
  8. 1 teaspoondry yeast (about 3 grams)
  9. Mix-in for shaping
  10. 2 ouncesprocessed cheese (about 60 grams)
  11. Toppings after proofing
  12. 1/3 cupshelled edamame (about 50 grams; boil 3.5 ounces/100 grams in pods)
  13. 3/4 ouncebacon (about 20 grams)
  14. 1 3/4 ouncesshredded pizza cheese (about 50 grams)

Cooking Instructions

    [Boil the edamame]
    1. Rinse about 3.5 ounces (100 grams) of edamame in pods. Bring 1 cup (250 ml) of water and 1/2 teaspoon salt to a boil in a pot, then add the edamame.

    2. Boil for about 3 minutes, then drain and let cool. Remove the edamame from the pods.

    Cut the processed cheese (I used Baby Cheese) into 1/2-inch (1 cm) cubes. Divide both the cheese and the edamame from step 2 into 9 portions each.

    Add all the bread dough ingredients to the bread machine pan. Select the "dough" course and start.

    If your bread machine has an automatic yeast dispenser, use it for the dry yeast.

    When the dough is ready, remove it from the pan and place it on a lightly floured surface (use extra bread flour as needed).

    Divide the dough into 9 equal pieces using a dough scraper. Gently press each piece to release air and shape into balls. Cover with a damp cloth and let rest for 8 minutes (bench rest).

    You can adjust the number of portions as you like. Use extra bread flour to prevent sticking when handling the dough.

    Take one piece of dough, press it flat to release air, and stretch it to about 3 inches (8 cm) wide. Place one portion of the processed cheese from step 3 in the center.

    Roll up the dough from the edge, pinching the seam closed with your fingers.

    Repeat steps 9 and 10 for all 9 pieces. Place them seam-side down on a baking sheet lined with parchment paper.

    Mist the dough and the inside of the oven with water. Place the baking sheet in a 105°F (40°C) oven for 40 minutes to proof.

    After proofing, remove the baking sheet from the oven and preheat the oven to 350°F (180°C).

    Make a single slit on the top of each dough ball with a knife.

    Place one portion of the edamame from step 3 and some bacon (cut into 1/4-inch/5 mm pieces) into each slit.

    Top with shredded pizza cheese.

    Once the oven is preheated, bake for about 15 minutes, watching closely.
