Cooking Instructions

Soften the butter at room temperature, then add sugar and mix well. Gradually add the egg yolk and mix thoroughly. Add the sifted dry ingredients, then mix in the walnuts. Wrap the dough in plastic wrap, shape into a log, and freeze for at least 1 hour to set.

Place parchment paper in the rice cooker. Once the dough is set, slice into 1/4-inch thick pieces and place them at the bottom of the pot. (For an oven, bake at 350°F/320°F for 20 minutes.)

Press the button, and once it switches to warm, let it sit for 15 minutes. Repeat this process twice, then flip the cookies (they should be set with a baked bottom).

After flipping, press the button again, and once it switches to warm, let it sit for 15 minutes. Repeat twice, then open the lid, unplug, and let the cookies cool in the pot. (The time from pressing the button to switching to warm varies for each rice cooker, as does the heat. The total time is at least 1 hour.)

I had only the four ingredients in my apartment, so I decided to try baking this coconut cookies using rice flour instead of the all-purpose flour to see the difference.
