Cabbage Dumplings (No Draining Needed)

Dumplings are a traditional food from northern China. Their shape resembles ancient Chinese gold ingots, making them a symbol of good fortune, especially during the New Year. Basically, they're dough wrappers filled with your choice of ingredients. For these cabbage dumplings, you don't need to drain the cabbage first—the texture will surprise you!
Tips:
1. You can customize the filling to your liking. Onion and shrimp paste are added to balance the flavor of the meat. The onion gives a slight crunch and a bit of sweetness, without a strong onion taste.

Cooking Instructions

Knead the ground pork by itself until it becomes sticky.

Wash the cabbage and drain well. Chop finely and place in a mesh colander to prevent excess water. Wash and drain the green onions, onion, and peeled shrimp, then chop each separately. Add each ingredient to the ground pork one at a time, mixing after each addition.

Once everything is mixed, add the seasonings.

Place a spoonful of filling in the center of a dumpling wrapper and fold it in half.

Pinch the edges firmly with your fingers to seal and shape the dumpling.
