When living abroad, I often miss Taiwanese street food. With limited ingredients, you can still recreate the nostalgic taste of Taiwan!

Mix all the filling ingredients together, add some water, and refrigerate until needed.

Combine all the dough ingredients, let the dough rest for five minutes, then knead for about 15 minutes until the dough is smooth and elastic.

Divide the main dough into small pieces weighing about 3/4 oz each (22-25 grams). Let them rest for 10 minutes.

Roll each small piece into a wrapper and fill with about 1/2 oz (15-20 grams) of filling.

Once all dumplings are made, cover them with a damp cloth and let them rise for about 30-40 minutes. Steam in a steamer for 15 minutes and enjoy.

Even without pork aspic, you can still make juicy soup dumplings! The trick is to add some water or broth when mixing the filling (or use a filling with higher fat content).
