Thai Style Chicken Livers

I like chicken livers, and am always looking for a new way to try them. Now my wife was not a fan, but she pretty much likes them fried, period. I found this pretty good, not over powering, a good way to have chicken livers. It was actually easy to make, didn't take a lot of time prepping. I made these with some fresh, stir fry noodles (udon), but you could just serve it over rice.

Ingredients

4 servings
  1. 1 poundchicken livers
  2. 1medium onion
  3. 3-5green onions
  4. 3 clovesgarlic
  5. 1 cupchicken broth
  6. 3 tablespoonoyster sauce
  7. 1 teaspoonblack pepper
  8. 1hot sauce to taste (optional)
  9. 8 oz.fresh noodles (optional)

Steps

  1. 1

    Rinse, clean and drain your chicken livers

  2. 2

    Cut your bulb onion in thin half rings. Just cut it in half stem to root, then slice across to creat half rings.

    Clean and dice your garlic

  4. 4

    Heat a little oil in a stir-fry, skillet, saute pan or wok on medium heat. I'm using a stir-fry pan.

    Add garlic and onion rings to hot oil. Stir fry until just translucent.

    Clean and cut your green onions in about 1 1/2 inch pieces

    Add green onion to bulb onion in hot pan. Stir fry for a minute

    Remove onions and set aside. You don't have to, but they will get mushy if over cooked. Your choice.

    Now if you are doing the stir-fry noodle thing, add a little oil to the hot pan, add your noodles

    Stir fry until just browned a little

    Remove noodles, you can add them to your onions.

    Add a little more oil to your pan. Up the heat to medium high. Add your livers

    Allow livers to cook on one side for a few minutes. Flip over.

    Cook another few minutes.

    Add oyster sauce to livers.

    Add chicken broth to livers, black pepper

    Stir and allow to simmer for 5 minutes, add hot sauce if using at this point.

    Add your onions (and noodles if using) at this point.

    Stir together, cook 5 minutes or until done.

    Serve. Garnish options, sliced green onion, sesame seeds, cilantro, parsley

    Some diced water chestnuts at the same time as the sauce add, is nice also. They a slight texture contrast.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
