Slice the eggplant lengthwise, score the skin, and cut into bite-sized pieces.

Place the cut eggplant in a microwave-safe bowl, toss with rice oil to coat, and microwave (600W) for 3–4 minutes until soft.

After microwaving, drain any liquid, add the vinegar, mirin, chicken bouillon powder, and oyster sauce. Mix gently, then microwave (600W) for 1 more minute.
