Yaki Udon with BBQ Sauce

I wanted to use up a 5-pack of frozen udon noodles quickly. I’ve tried making yaki udon with sauce, soy sauce, and ketchup, but wondered what else I could use. I also needed to use up some Japanese BBQ sauce.

Cut the pork belly into pieces about 1.5 inches long. Slice the cabbage, onion, and carrot into thin strips.

Heat a frying pan with a little vegetable oil. Add the pork belly and vegetables. Season with salt and pepper, then stir-fry over high heat.

Continue stir-frying until the vegetables are tender.

Add the frozen udon noodles (preheated in the microwave) and stir-fry well.

Add the Japanese BBQ sauce and stir-fry until most of the liquid has evaporated. Serve hot.
