Perfect for hot weather! This simple, nutritious cold soba noodle dish is great for a solo lunch or a meal during remote work.

Steps

Blanch the okra briefly in the pot you’ll use to cook the soba noodles.

Remove the okra, then start cooking the soba noodles in the same pot.

Peel the nagaimo (Japanese yam), place it in a plastic bag, and smash it with a rolling pin or similar tool.

Cut off a corner of the bag and squeeze out the yam puree.

Slice the okra into 1/8-inch (2–3 mm) rounds. Mix the natto with its sauce. (Chop the kimchi for easier eating, if desired.)

Rinse the cooked soba noodles under cold water, drain well, and arrange on a plate. Top with natto, okra, kimchi, nagaimo, and the egg yolk. Sprinkle with toasted sesame seeds and shredded nori.

Pour the mentsuyu sauce over the noodles just before eating.
