Make a cut between the bones of each chicken wing. In a bowl, combine the black vinegar, soy sauce, sugar, mirin, and chicken wings. Rub to coat well. If possible, marinate overnight.

Thinly slice the king oyster mushrooms, ginger, and carrot.

Add the chicken wings and marinade to a skillet. Add the mushrooms, ginger, carrot, and water. Cover and cook over high heat.

Once it comes to a boil, reduce to low and simmer for about 13 minutes. Remove the lid, turn the wings over, and simmer over medium heat until the sauce is slightly reduced.
