Cut the chicken thigh into bite-sized pieces and coat with potato starch (or cornstarch).

Heat vegetable oil in a skillet. Place the chicken pieces skin-side down and cook until browned. Flip, cover with a lid, and cook until fully cooked through.

In a small bowl, mix together the sake, mirin, soy sauce, and sugar. Pour the sauce over the chicken in the skillet and simmer, turning the chicken to coat, until the sauce thickens and glazes the chicken.
