There is one dish that I have been very fond of since my childhood. It’s a dish of Mackerel simmered in sweet miso sauce. Sadly I can’t cook it here in Melbourne because it is too hard to find fresh Mackerel, that is called ‘Saba’ in Japanese. Then I created this dish using canned Mackerel which is commonly available from most supermarket stores. The taste is almost same. It’s good enough for me. If you like Mackerel, why don’t you try it?

Ingredients

1 serving
  1. 1 can (125 g)Mackerel
  2. 1/4Onion *thinly sliced
  3. 1 teaspoonOil
  4. Finely sliced Spring Onion *optional
  5. 1serving warm Cooked Rice
  6. Miso Sauce
  7. 1 tablespoonMiso
  8. 1 tablespoonSake (Rice Wine) OR Mirin
  9. 1& 1/2 teaspoons Sugar
  10. 1 teaspoonGrated Ginger
  11. Soy Sauce *optional, depends on the saltiness of Miso

Steps

  1. 1

    Drain the Canned Mackerel and discard the brine or water. Make Miso Sauce by mixing all ingredients in a small bowl. You may wish to add a small amount Soy Sauce, but it depends on the saltiness of Miso.

    Heat small amount of Oil in a frying pan over a medium heat, cook sliced Onion until transparent.

  3. 3

    Add the drained Mackerel and the Sauce and simmer over a low heat for a minute or so, and let all well combined.

  4. 4

    Half fill a bowl with warm Cooked Rice and cover it with the Mackerel mixture. Sprinkle with some finely sliced Spring Onion and enjoy.
