You may add some bacons.

In a pot, boil the potatoes with peel in enough water (1,5 liter). Cook it until it is well cooked. Use the knife to check the doneness (if it is easy to stick the knife into the boiled potatoes, it means the potatoes is soft enough).

Drain out the water and let the potatoes cool down before peel them.

Peel the potatoes and slice it into quarter / ring pieces / as your preference

In a non-stick pan, heat the cooking oil and place in chopped onions and sliced potatoes. Stir-fry them on medium heat until it is golden brown and soft. It takes minimum 10-15 minutes.

Season the potatoes with salt, pepper and chili powder.

There are two options for cooking the eggs: First, you may add into the potatoes and stir fry it together after the potatoes are well cooked. Second, you may cook it separately as your preference (scrambled or sunny side up or omelet)

Serve your brat kartoffeln.
