Fried Pumpkin Balls
A Portuguese sweet dish generally made around the Christmas holidays.

Peel and de-seed the pumkin.

Add the pumpkin and some salt to a saucepan with water and bring to the boil. Cook through.

Once the pumpkin is cooked, remove the pumpkin and let it strain most of its liquid. If you have a cheese cloth it is best for straining the liquid. If not use a regular strainer. On this occasion I strained as much of the liquid as possible use a cloth.

Next blend the pumpkin, rum, and sugar together. Blend it until it is a smooth mixture throughout, add more water if needed.

Once thats done, pour the mixture into a bowl and add the flour and baking powder and mix it in well.

Next pour the oil into a frying pan to begin frying the balls. Usually it takes about 1-3 minutes on both sides or until they are golden brown.

Using two tablespoons begin to spoon the mixture into balls for frying. If the dough is still too soft add more flour and mix it in accordingly until your happy with the consistency. Spoon the mixture right into the hot oil one by one.

You'll need to fry them in batches until they are all golden brown throughout. As the first batch is frying, prepare a bowl of sugar and cinnamon and mix well.

Once its fried, place on a plate lined with paper towels to remove some of the oil from them.

Individually coat each ball with the sugar and cinnamon.

And serve.
