Marinate the chicken thighs in rice wine for at least 20 minutes. Cook the pasta until al dente (about 9 minutes), then drain and set aside.

Heat sesame oil over low heat and sauté the ginger slices until fragrant. Roll the ginger, then add garlic and cook until golden. Add shiitake mushrooms, stir-fry, then remove and set aside.
Tip: You can substitute king oyster mushrooms if you like.

Sear the chicken thighs until browned, then add the onion and stir-fry. Remove and set aside.

Caramelize the rock sugar in the pan.
Tip: Don’t add too much sugar, or the dish will be too sweet.

Return all the cooked ingredients and pasta to the pan. Add chili pepper, toasted sesame oil, soy sauce, and rice wine. Simmer together.
Tip: Use equal parts of toasted sesame oil, soy sauce, and rice wine, but you can reduce the sesame oil to half if you prefer.

Just before serving, add Thai basil and toss briefly. Serve immediately.
