Steps

Prepare a colander covered with a cloth. Put a pot underneathe the colander.

Bring milk to boil. Add all the spices EXCEPT SALT. Add them in the boiling milk. Let the milk boil for another 1-2 minutes so that the flavours of the spices blend well with milk.

Add a little cytric acid water at a time until you see green whey separated. Turn off the stove and add mint coriendar leaves. Combine well and quickly pour it into the colander. Tie or twist the cloth to press and remove extra water from paneer. Hang it to the tap over your sink for 20 min to get rid of extra water.

Untwist the cloth, add salt to paneer and lightly mix it with paneer. Fold wrap the cloth well to shape the paneer. Place a lid with holes on a flat surface. Place the cloth with paneer on it. Place a regular lid on the top and then put a heavy weight on it. This way paneer will be pressed and all the extra water will drain out through the lid with holes. Let it sit this way for 30-60 min.

Unwrap the cloth and wola! The beautiful paneer is ready! Yummm!
