Fried Omena,Ugali and Kachumbari

Omena or sliver cyprind is consumed here in Kenya especially by people living near The lake region. it is mainly consumed with Ugali and in low amounts because They tend to fill the stomach really quickly. Its rich in nutrients such as calcium and phosphorous. They are low in cholesterol levels.

Put to boil 2 cups of water.

Into the water add maize flour in small amountshile mixing with a mwiko.

Continue adding flour until the ugali thickens. it shouldn't be too thick

Cover the ugali for 5 minutes to allow it too bake

Continue mixing and turning for 2 minutes then remove from and cover it fully to prevent it from being cold

Into another pan put the 2 tbsp of oil. and add the washed and dried omena

Fry the omena till it turns golden brown and it produces a sweet smell

Then serve while hot with

Chopped the onions and tomatoes into equal sizes and mix to form kachumbari.
