A favorite childhood memory of mine is enjoying these loukoumades during summers in Northern Greece - Macedonia, along with so many other treats... 😍
Let me also tell you that my mom always makes loukoumades with self-rising flour & yogurt and then honey (just like grandma did.)
We always devour them!!!... But I believe that with yeast and syrup, they turn out even better!!

Syrup:
▪️ Boil all the ingredients until you have a nice clear syrup.
▪️ Set it aside. - 2
Batter mixture:
▪️ Mix all the ingredients, cover with towels, and let sit for about 30 minutes.
👉 After this time, you will have a fluffy, bubbly batter.

Shaping - cooking:
▪️ Heat the oil on high temperature.
▪️ Carefully drop the mixture with a spoon.
▪️ Fry in batches.
▪️ Once each batch is ready, transfer to a dish with paper towels. - 4
Syrup coating - serving:
▪️ Finish frying and coat the loukoumades with syrup, again in batches, for 2-3 minutes.
▪️ Serve with cinnamon and, if desired, crushed walnuts ▪️Eat immediately! - 5
Notes:
👉 For better SHAPE, put the mixture in a piping bag and cut with scissors over the oil.

👉 Want plain honey instead of syrup?
▪️ Adjust the proportions slightly for a THICK BATTER:
1 cup flour + 2/3 cup lukewarm water. (Or 1 1/4 cups flour and a bit more water.)
Everything else stays the same. ▪️ Fry on medium to low temperature.
▪️ For shaping, use a second spoon to push the batter taken with the first. - 7
Alternatively,
A) either use a piping bag again,
B) or hold the mixture in your palm and squeeze between your index finger and thumb. Cut with a spoon. You can keep this spoon in a glass of cold water.
(You can also do this with a knife when cutting cake. The pieces come out cleaner. 🎂)
