Lychee or Litchi is a lovely juicy Fruit and resembles a lot with Rambutans of Thailand. Though both are undoubtedly different and have a distinct flavour and texture.
These are sweet too. And therefore perfect for making Juices. I have incorporated Mint with these little beauties this time because of the scorching heat. Mint acts as a coolant and therefore lends a great look and appeal along with of course the cooling effect.
Lychee are rich in many Vitamins and Minerals plus antioxidants such as Potassium and Copper. These may help protect against Heart disease, Cancer and Diabetes. Rambutans and Longans are the closest to Lychee because of the same Soapberry family they are common to. Lychee also belongs to the same family. Though Lychee is best consumed fresh, yet these can be canned or dried for consumption as well. Muzaffarpur is called the Lychee kingdom in India and has largest amount of produce to their credit. Lychee is very sweet and acidic in nature due to the presence of Vitamin C in it. Hence it's a great option for everyday as a perfect immunity booster both for the children and the adults.

Wash and pat dry them at first. The outer thin layer of skin needs to be peeled from each lychee. Next is to remove the big seed too. Add them to the blender jar.

Also add the rest of the ingredients too. Blitz on a high for 2 minutes or until everything gets mixed well.

Serve it chilled right away. Or can refrigerate until ready to serve. It can be prepared an hour or two before serving. Do not refrigerate it for a long time. It's better to relish freshly made juices always.

Serve this tantalizing juice with more of ice-cubes. Enjoy!
