Ingredients

  1. 400 gmpointed gourd
  2. 1 1/2Govinda bhog rice
  3. 2 Tbspraisins/kismis
  4. 2nos dried bay leaves
  5. 3nos green cardamom
  6. 4-5cloves
  7. 1/2 inchcinnamon stick
  8. 1/2 Tspturmeric powder
  9. 1 Tspcumin powder
  10. 1/2 Tspcumin seeds
  11. 1 Tspcoriander powder
  12. 1 TspKashmiri red chilli powder
  13. 1 Tspgaram masala powder
  14. 2green chillies
  15. 1onion sliced
  16. 1 Tbspchopped garlic
  17. 1 Tspginger paste
  18. 2 Tbspvegetable oil
  19. 1 Tbspmustard oil
  20. 1 Tbspghee/ clarified butter
  21. 1tomato chopped
  22. 1 Tspor salt as required
  23. 1 Tbspsugar
  24. 2 Tsplemon juice

Steps

  1. 1

    Wash the rice, 2- 3 times to remove dirt. Soak the rice with water for one hour. Then shift to a colander to remove excess water.

    Wash and chop deshi/ local parwal. Remove seeds and chop into two.

    Heat 2 Tbsp vegetable oil and fry the parwal till soft and light brown. To the remaining oil add rice from the colander and fry for 6-7 minutes, till translucent. Keep aside.

    Heat mustard oil in the pan. Add cumin seeds, bay leaves, whole garam masala and saute on low heat. Further mix green chilli and sliced onion. Fry till onion is done. Add chopped garlic and saute till aromatic.

    Then, mix chopped tomatoes and ginger paste. Fry and add dry masala powder, turmeric powder and kashmiri red chilli powder. Cook the masala on low flame till aromatic.

    Add 3 cups of water and bring to boil. Mix well and add Govind Bhog rice and parwal. Mix well. Adjust salt, cover and cook till water is absorbed. Mix sugar and lemon juice well with the pulao.The Parwal and Govind Bhog Pulao recipe is ready to serve.
