Chicken leg quarters, thigh attached to the drumstick, weight half a pound each and cost 40 cents a piece at the farmers market, frozen in ten pound bags. One leg quarter feeds two people, because the bone is only 20% of the weight.
Smoked chicken meats stay fresh for a week in the fridge. Delicious on sandwiches, in salads, and as snacks.
My air fryer smoke method is hands off, the probe thermometer ensures a safe, 165F degree, internally cooked chicken, and the skin is tender, smoked and glazed. By smoking two quarters in the air fryer, enough meat for a week for one person for under one dollar.

Ingredients

overnight marinade, 45 minute hot smoke
2 people
  1. 2chicken leg quarters, one pound
  2. Marinade: Tbs soy sauce, Tbs garlic, Tbs brown sugar, 2 Tsp seasalt, Tsp pepper, cup of lemon juice, cup of water to cover gallon ziplock bag with leg quarters
  3. Cuphardwood pellets with Tbs butter on top
  4. Equipment: cast iron sauce pan, air fryer oven, ziplock gallon bag, metal cup, brush, probe thermometer
  5. Cost: 40 cents per chicken quarter, marinade 10 cents, hardwood 10 cents, 25 cents per dinner

Cooking Instructions

overnight marinade, 45 minute hot smoke

    Marinade 2 frozen chicken quarters overnight in ziplock bag on kitchen counter in marinade with all ingredients. Wipe marinaded chicken quarters dry.. Simmer left over marinade to make thick chicken glaze, brush on. About 15 minutes.

    Place metal cup with hardwood chips and Tbs of butter on top in 500F degree oven till flaming, about 15 minutes, blow out flame, place in air fryer for smoking.

    Hot Smoke chicken quarters at slow bake of 325F degrees and 45 minutes or less, till internal probe says 165F. Serve. Enjoy. Bones go to bokashi fermenter.
