Peel and shred the carrot.

Beat the eggs. Heat oil in a pan, add the eggs, and scramble them. Let the cooked eggs cool completely (use a fan if desired).

Mix the scrambled eggs with the shredded carrot. Add salt to taste.

Place the filling into dumpling wrappers and seal.

When ready to eat, cook the dumplings in boiling water.
