This dish is a summer favorite at my house. It's quick and delicious.

In a bowl, combine the milk and burrata cream. Mix until smooth.

Cut the smoked salmon into strips.

In a skillet, heat a drizzle of olive oil and sauté the salmon for a few seconds to release its flavor.

Meanwhile, cook the pasta in a pot of boiling salted water. Reserve a scant ladleful of the cooking water and add it to the burrata cream, mixing well. Season with salt and pepper to taste. (Keep a little extra cooking water aside in case you need it.)

Drain the pasta and add it to the skillet with the smoked salmon. Add the burrata cream and toss well to combine. If needed, add a splash of the reserved cooking water to reach your desired consistency.

Serve on plates and garnish with lemon zest and a sprinkle of black pepper.
