Preheat the oven to 400°F (200°C).

Peel the apples, remove the cores and seeds. Cut into quarters, then slice thinly. Roll out the puff pastry in a tart pan. Prick the pastry with a fork.

Spread the applesauce evenly over the crust. Arrange the apple slices in overlapping circles along the edge, then make a second circle, and finally place a few slices in the center.

Sprinkle with the vanilla sugar. Dot the tart with small pieces of butter evenly distributed. If desired, sprinkle with cinnamon as you would pepper, to taste. Bake in the preheated oven at 400°F (200°C) for 25 minutes.
