Wash and soak sabudana for 1 hour. Keep aside.

Boil milk for 2-3 minutes on high flame. Add soaked sabudana and cook for 4-5 minutes on medium flame. Stir in between. Add chopped nuts also. After that remove from heat and keep aside.

Preparation of caramel:Heat a non-stick pan and add sugar. Add 2 tbsp water and let the sugar melt on low heat. Stir occasionally.

After 7-8 minutes sugar melts completely and caramel is formed.

Add caramel to sabudana, and cook on low medium flame till caramel is dissolved completely. Cook till desired consistency and do not over cook. Add cardamom powder and remove from heat.

Caramel sabudana kheer is ready to serve. Serve chilled or warm.
