It was my son-in-laws and my birthday last week. We couldn't celebrate properly because, tropical storm Debby wanted us to celebrate this week. He brought over some goat meat, wanting me to cook it. This is a bit of a lengthy process, a bunch of step and quite a bit of ingredients, but I assure you when I seen the expression on his face when he tried it. It was worth the work.

Ingredients

  • Stage 1
  • As neededsalt
  • 1/2 teaspoonground allspice
  • 1/2 teaspoonground coriander
  • 1 tablespoonground paprika
  • 1 tablespooncurry powder
  • 1 tablespoonground yellow mustard powder
  • 1/4 teaspoonground nutmeg
  • 1-1/2 tablespoonkosher salt more if needed
  • 1/2 cupdehydrated minced onion
  • 2 tablespoonsminced garlic
  • 1 poundsliced onions
  • 1/2 cupreal good balsamic vinegar
  • 3 leavesbay leaf
  • 1/2 cupcompressed brown sugar
  • 1/2 teaspoonground black pepper
  • 1 quartwater divided
  • 5 poundsbone-in goat meat
  • Stage 2
  • 1-1/4 poundcarrots
  • 1/2 cupcelery leaves
  • 1/2 teaspoonground sage
  • Stage 3
  • 4 poundspotatoes

    Wash and pat dry the goat. When you get these in cut up chunks there, is a chance that the saw blade left small particles of bone on the goat. Give a good rinse and pat to dry.

    Mix the spices together, except the ground sage that goes in in stage 2. Now coat the goat with the spices. Add half the water and all the vinegar to the crockpot. Add in the bay leaves.

    Let the goat rest for 20-25 minutes. Add the dehydrated onion and minced garlic. After 25 minutes add the brown sugar.

    Massage the sugar on the goat and add to the crockpot. Then lightly sprinkle with salt.

    We left a bit of the spices in the bowl. Take the remaining water and add to the bowl. Use the water to collect the remainder of the spice and pour it into the crockpot.

    Slice the onion and add to the goat cooking in the crockpot.

    Let cook on hi for 3 hours.

    Stage 2; Chop the carrots and add them to the goat, after it's cooked for 3 hours on hi.

    Let cook another hour. Then add celery leaves. Now is the time to add the ground sage. Incorporate well into the goat mixture. Turn the heat down to low. Continue to cook. Before going to sleep add 30 tomato sauce and turn crockpot to warm.

    Stage 3; When you get up turn back to low setting. Now wash and peel, the potatoes, each potato weighed 1/2 pound each, dice them into small pieces to cook and be done in half a day. This has the whole house smelling so very good and delicious.
