The tender fillet easily separates from the skin after baking. It remains juicy and conveys the taste of all the spices.

Finely chop the garlic with a knife. Cut the onion into feathers. Cut the tomatoes into large pieces.

Place the trout fillets on a baking sheet. Season with salt and fish spices. I like dried lime and lemon zest best. Evenly distribute the garlic, tomatoes and onions.

Pour soy sauce and lemon juice over the fillet. Bake in an oven preheated to 180 degrees for about 20 minutes.
