BREAKFAST - Skillet Oat Bread

Add the oats, egg, salt, baking powder, oil, and half of the banana to a blender. Blend until smooth. Cut the other half of the banana into small cubes and stir them into the blended mixture.

In a small pot or skillet, sprinkle some rolled oats and your chosen toppings, then pour in the mixture.

Cook over very low heat for 5 to 7 minutes, or until the top is set and doesn't stick to your fingers when touched. Flip with a spatula, cover, and cook for another 5 minutes on the other side.

Serve with fruit and a drizzle of honey if desired.
