Steps

Assemble ingredients, chop all vegetables.

Put Malabar Spinach Stems and Leaves to par boil for few minutes by adding little water. Keep aside.

In heated kadhai add oil, allow to heat. Add Nigella seeds and allow to sizzle. Add Pumpkin, Sponge Gourd, Pointed Gourd, Eggplant, green chilli and stir fry for 4-5 minutes under medium heat.

Add boiled Malabar Spinach + salt + Turmeric powder and mix well,
Add Malabar Spinach along with water. Cover and cook for 7-8 minutes. - 5
Keep in stand by mode for around 2 minutes.

Dish is done.
