Pumpkin Date Banana Soy Milk Oatmeal Porridge

In April 2021, I was diagnosed with glaucoma in one eye at the Tan Tock Seng Hospital Eye Center. I underwent cataract removal surgery and recovered after the surgery.

Pumpkin is rich in beta-carotene, which can be converted into vitamin A in the body. This is beneficial for the eyes, improving vision and preventing night blindness and macular degeneration.

Onions are rich in antioxidants such as quercetin, sulfides, and selenium. These are beneficial for the eyes, helping to eliminate free radicals and relieve eye fatigue.

King oyster mushrooms are an edible fungus with extremely high nutritional and health value. They can eliminate free radicals in the body, protect the liver, and help stabilize blood sugar, lower blood lipids and blood pressure, and protect the cardiovascular system.

On March 1, 2024, I decided to officially retire at the age of 57. In order to reduce the risk of glaucoma in the other eye, I carefully designed this breakfast recipe with two servings of fruit, three servings of vegetables for myself, which I eat almost every morning.

During the most recent follow-up visit, my ophthalmologist praised me for doing well and my skin and eyes were much better than they were six months ago.

Ingredients

  • 800 mltap water
  • 2Chinese spoons (20g) of organic traditional oatmeal, hulled and flattened
  • 1Chinese spoons (10g) of organic hulled rye flakes
  • 1Medium onion
  • 200 gPumpkin
  • 1King oyster mushroom
  • Halfa teaspoon of white pepper powder
  • 20 gOrganic unsweetened pure soy milk powder
  • 1 tea spoonorganic extra virgin olive oil
  • 1Not very ripe bananas
  • 3Fresh Iranian black dates

    First cut 150g to 200 grams of pumpkin and king oyster mushroom into small pieces, put them into the steamer, and set the timer on the induction cooker to steam for 20 minutes.

    In order to remove the chlorine in Singapore's tap water, put 800 ml of tap water in a pot, then put it on an infrared electric stove and boil it to 100 degrees Celsius at 2000W of power.

    Reduce the power of the infrared stove to 200W, add 2 tablespoons of hulled and flattened rolled oats, 1 tablespoon of hulled and flattened rolled rye flakes, and 1 medium onion chopped. Then increase the power to 1000W, stir with bamboo chopsticks, and cook for about 10 minutes. Soluble high-quality fiber foam will gradually appear and coat the entire pot.

    Then reduce the power to 200W, stir with bamboo chopsticks, set the timer for 10 minutes, and cook until tender at a lower temperature. After that, you can turn off the power.

    Pour the steamed pumpkin and king oyster mushroom into the stainless steel pot of cooked oatmeal porridge and mix well. In order to avoid the coagulation of soy milk powder and destroy the nutritional value of soy milk powder, the whole pot is quickly cooled to about between 50 to 60 degrees Celsius with a baisan of tap water and stirred continuously with bamboo chopsticks.

    Then add white pepper powder well mixed, followed by 20 grams of organic pure soy milk powder and 1 tablespowith 1 teaspoon of organic extra virgin olive oil to the porridge pot, stir with bamboo chopsticks until well mixed. You will find that the soy protein acts as an "emulsifier," encapsulating fat molecules into tiny particles that are evenly dispersed in the porridge, forming the observable "oil-in-water" emulsion, a chemical and physical change.

    Add one peeled, semi-ripe bananas (taken from the refrigerator). Mash the bananas with bamboo chopsticks and incorporate them into the porridge. Then add three seeded fresh dates, mash them, and incorporate them into the porridge. Mix well. Pour the mixture into a porcelain dish.

    Finally a sticky, delicious, healthy and nutritious breakfast that I eat almost every day after my retirement is already.
