Aloo Bharta or Mashed Potatoes Indian style with Mustard oil and simple spices. It's a great accompaniment at mealtimes. And is a perfect side dish that goes well with simple Dal Chawal or Lentil Curry and steamed Rice, Khichdi, Rotis, Phulkas, Parathas and Pooris.
All in all a great option for everyday meals.
It can be a perfect choice for Lunchbox ideas too. Frankies, Wraps and Rolls also get amazingly delicious with this Aloo Bharta. It can be a great filling or a stuffing as well. Sandwiches also taste super tempting and yummy with this beautiful mashed Potatoes or Aloo Bharta. I did it in two ways actually, one with just Potatoes and the other one with both Potatoes and roasted Tomatoes. Both the ways it tasted yum. And both were super delicious with a steaming hot plate of simple boiled Rice and Ghee or Clarified Butter. My family thoroughly enjoyed it for Sunday Lunch.

Heat oil in a pan and temper with the cumin and the nigella seeds. After it stops sizzling, add the garlic, onion, salt, turmeric powder and saute until light golden in colour.

Add the boiled and mashed potatoes now. Also add chilli and roasted coriander powders. Don't forget to garnish with some freshly chopped coriander leaves. Mix everything well. That's it. It's all done.

Serve with hot steamed rice or as a side dish with dal-chawal, khichdi, chapatis, parathas etc. Enjoy!
