Steps
- 1
The peanut butter from Hualien Fenglin comes in a 200g small jar, perfect for small families to enjoy fresh. It comes in sweetened and unsweetened, smooth and chunky varieties. Refrigerate after opening to keep it fresh.
- 2
● Slice the pork loin (also known as mouse meat) along the grain, place in a plastic bag, and marinate with the marinade for 10 minutes.
● Wash the eggs.
● You can use bagels or bread, homemade or store-bought. After exercising, I bought three bagels but realized I could only eat two. - 3
● For a soft egg texture, beat the eggs in a bowl with 1/3 teaspoon salt and 1 tablespoon water (not listed in ingredients) until well mixed.
● Heat 2 teaspoons of oil (not listed in ingredients) in a pan over low heat. Pour in half of the egg mixture, stirring to form an egg pile about the size of a bagel. Once the egg solidifies, remove it from the pan. Repeat with the remaining egg mixture. - 4
● In the same pan, add 2 teaspoons of oil (not listed in ingredients) and cook the three slices of pork for 5 minutes with the lid on. Flip and cook for another 2 minutes. Turn off the heat. You can leave the cooked pork in the pan to save washing a plate.
※ Store any leftover pork in a sealed container in the fridge and use it within three days. - 5
● Slice the bagels in half horizontally with a bread knife.
● Spread peanut butter on one half of each bagel. Feel free to spread as thick as you like. - 6
● Once all ingredients are ready, take out some frozen berries for a refreshing addition to your breakfast or afternoon tea.
I often get asked how I eat frozen berries. I buy batches that have been tested for pesticide residues. The simplest way is to eat them as fruit. For this meal, I added some frozen blackberries and raspberries for a sweet and tangy balance to the protein-rich peanut butter bagel. - 7
Oops, I apologize for my eagerness to dig into the peanut butter, which led to a plating mishap.
1. The similar color scheme lacks visual contrast.
2. One bagel should have been covered.
