Steps
- 1
Slice the onions thinly and set aside. Plan for one medium onion per person.
- 2
Heat a little oil with butter in a pot, making sure the butter does not brown.
- 3
Add the onions to the hot oil and butter. When they turn brown, add the white wine and cook over low heat for about 20 minutes to caramelize, stirring occasionally to prevent burning.
- 4
While the onions cook, make croutons using baguette or crusty bread. Rub a garlic clove on the bread, drizzle with a little oil, and bake until crispy.
- 5
Once the onions are well browned, add salt, pepper, and the bouillon cubes dissolved in water. Let it rest for a few minutes, then turn off the heat.
- 6
In oven-safe soup bowls, add the onions and broth, then top with croutons and shredded cheese. Broil in the oven until golden brown and enjoy this delicious gratinéed onion soup.
