Ingredients

1 hour 25 minutes
Serves 4–6 servings
  • 1.1–1.3 lbs ground beef or pork (500–600 grams)
  • 1 boxpenne pasta
  • 1red bell pepper
  • 4 tablespoonsolive oil
  • Salt, pepper, thyme, paprika
  • 2 cupshot pasta water (about 500 grams)
  • 1 tablespoontomato puree
  • 1small onion, finely chopped
  • 2 clovesgarlic, finely chopped
  • Béchamel sauce
  • 3–3 1/3 cups plain Greek yogurt (700–800 grams)
  • 4eggs
  • 7 ozshredded yellow cheese (such as kefalotyri and graviera, or substitute with Parmesan and Gruyère) (200 grams) + a little extra cheese and sesame seeds for topping
  • 1 teaspoonthyme, salt, pepper
  • 1/2 teaspoonnutmeg
  • 1little margarine or butter for greasing the baking dish

    Gather all the ingredients. Finely chop the onion, garlic, and bell pepper. In a large deep skillet, heat the olive oil and sauté the ground meat. Gradually add the onion, garlic, bell pepper, tomato puree, salt, pepper, and hot pasta water. Simmer until the liquid is absorbed. (You can either cook the penne separately and reserve some pasta water, or add the uncooked penne to the skillet and cook everything together.)

    Meanwhile, in a bowl, combine the Greek yogurt, eggs, cheese, and spices. Mix well. Grease the bottom of a baking dish with a little margarine or butter.

    Layer the meat and penne mixture in the baking dish. Pour the béchamel sauce over the top and use a spatula to spread it evenly. Garnish with a little extra cheese and sesame seeds (some people also add feta). Bake in a preheated oven at 375°F (190°C) for 40 minutes. Enjoy!

Όπως οι περισσότεροι της γενιάς μου,μεγαλώσαμε σε πραγματικά μια μεγάλη κουζίνα! Εκεί ήταν το καθημερινό μας,υπέροχη ζεστή με την σόμπα ξύλου στην μέση,που πάντα κάτι έβραζε πάνω της ή ψηνωνταν μέσα της!!! Τσάι,πατάτες στη στάχτη,ταψιά με όλα τα καλά της ελληνικής γης! Έκτοτε τα χρόνια πέρασαν,η ζωή διαφοροποιήθηκε και χάθηκε πολύτιμη γνώση και τρόπος Ζωής...Τα'φερε έτσι και ασχολήθηκα με την εστίαση σχεδόν στα 3/4 της ζωής μου,με αποτέλεσμα να κάνω χρήση αυτών που είχα βαθειά μέσα μου,σε συνδιασμό με τις νέες πρακτικές των εκάστοτε μαγείρων που βοηθούσα! Η μαγειρική έχει κανόνες όμως θέλει ψάξιμο και φαντασία,φυσικά και σεβασμό στην παράδοση!!!Like most of my generation, we grew up in a really big kitchen! There was our everyday, wonderfully warm with the wood stove in the middle, where something was always boiling on it or roasting in it!!! Tea, potatoes in the ashes, pans with all the good things of the Greek land! Since then the years have passed, life has changed and valuable knowledge and way of life has been lost...It worked out like that and I dealt with focus for almost 3/4 of my life, as a result of which I made use of what I had deep inside me, in combination with the new practices of the chefs I was helping! Cooking has rules, but it requires research and imagination, of course, and respect for tradition!!!
