Chilli and garlic potato salad

Steps

Wash and slice the potatoes in about 5mm thick. (you can peel them if you wish)

Bring a pan of water to the boil and add a good sprinkle of salt and pepper

Immerse the potato slices into the water and cook until they are ala dente. When cooked transfer to cold water

Add olive oil, garlic and chilli to a pan and gently saute it until soft but not coloured. Sprinkle with salt and pepper an leave to cool.

Dry your potato slices with kitchen roll and arrange on a serving platter. Using a spoon, cover them with the garlic and chilli oil and the garnish the dish with a sprinkle of spring onions.
