As part of my diet, I eat legumes in moderate portions because they're rich in protein and fiber. They're a good source of healthy carbohydrates and help me manage cholesterol, blood pressure, and weight. They also help me feel full.

Check the split peas to make sure there are no foreign objects like sticks or small stones. Rinse the peas with water, place them in a bowl, cover with plenty of water, and soak overnight.

The next day, in a pot, bring the peas to a boil in the vegetable broth along with the salt and oregano. Reduce the heat and simmer until the peas completely break down into the liquid.

In a skillet or pot, heat the oil and sauté the onion with the garlic and ginger for a few seconds. Add and sauté the rest of the vegetables. Add this mixture to the pea soup and cook for 10 more minutes. Turn off the heat and let it rest.

CROUTONS
Place the bread slices on a small baking sheet.
In a bowl, mix the olive oil with the garlic, parsley, and dried oregano. Spoon the mixture over the bread slices and toast them in a toaster oven or oven. Serve the toasted croutons with the pea soup. - 5
Serve the soup with the croutons.
