Ingredients

  • 400 g (14 oz)Spaghetti
    2 ways to save tomatoes
  • 6-8 clovesgarlic, thinly sliced
  • 1/4 cup (60 ml)extra virgin olive oil
  • 1/4 teaspoonred pepper flakes (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan (optional)

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions, typically 8-10 minutes until al dente.

    Reserve 1/2 cup of pasta cooking water, then drain the pasta.

  2. 2

    While the pasta cooks, heat the olive oil in a large pan over medium heat.
    Add the garlic slices and sauté gently, being careful not to burn the garlic. Cook for 2-3 minutes until the garlic becomes golden and fragrant.
    Add the red pepper flakes and a pinch of salt, stirring to combine.
