A delicious combination of potatoes, corn, and cheese! Enjoy with sauce on freshly fried croquettes.

Peel and cut the potatoes into small pieces. It's recommended to cut them small since they will be mashed later.

Place the potatoes in a microwave-safe bowl, cover with plastic wrap, and heat at 600W for 6 minutes. Once the potatoes are soft, mash them with a spatula.

Mix the mashed potatoes with the mayonnaise, milk, corn, salt, and pepper.

Shape the mixture by placing cream cheese in the center. Make sure to press firmly so the corn doesn't fall out.

Coat each croquette in flour, then egg, and finally breadcrumbs. Fry in oil at 340°F (170°C) until golden brown. The inside should look like this.
