Oven roasted fresh Pigeon Peas or Hari Toor Daal is an incredible snacking or an Iftaar idea that's healthy and wholesome.
Though I have posted so many variations of oven roasted goodies, these fresh Pigeon Peas are an excellent option for munching. Not only as a dry snack, these can be used to make Chaats.
As an innovative idea by me this Ramadan 2025, it definitely stood out and was loved by my family and friends. The crispness can be according to one's own choice. If you don't prefer them to be too crisper, just remove them from the oven beforehand. Therefore keep a track of the time set. Also any other spices like dry Mango and Cumin powders also can be used.
Kachri powder also can be used in place of dry Mango or Amchur powder. Let's get started then.

Steps

Remove all the seeds from the fresh pigeon peas. Wash them well and allow to drain.

Mix all the ingredients as mentioned. Also keep a parchment paper lined baking tray ready.

Bake in a preheated oven on 180° for about 35 to 40 minutes. It depends upon the oven you are using as every oven temperature settings are different. Keep turning and tossing one or two times in between to ensure even roasting of it.

Let it come down to the room temperature before storing in airtight container. Serve these crisp and crunchy snack for Iftaar this Ramadan. Enjoy!
