Cajun Spam Vermicelli

I was planning Spam Singapore Noodles Pancit for a weeknight dinner, but since it was Fat Tuesday, I did a Mardi Gras recipe by substituting the yellow curry powder with Cajun seasoning. Was delicious!

Would be good with substitutions like shrimp, chicken, sausage, and celery and carrots.

Ingredients

  1. 4nests bean thread vermicelli
  2. 1 canSpam Light
  3. 1/2onion
  4. 2jalapeños
  5. 2 cupschopped cabbage
  6. Dashsoy sauce
  7. Dashcooking wine
  8. Dashfish sauce
  9. DashCajun seasoning, I use Slap Yo Momma or Tony Chachere's

Cooking Instructions

    Cover vermicelli nests with hot water and let sit 5 minutes. Drain, rinse with cold water, drain again, and set aside.

    Cut Spam into strips and crisp in a hot wok with oil. Remove from heat and set aside.

    Sauté onions, jalapeños, and cabbage in wok for 5 minutes.

  4. 4

    Add vermicelli and all dashes of seasonings to wok. Sautee 2 minutes.

    Add crisped Spam to wok and sautee 2 minutes.

  6. 6

    Serve with steamed rice.

Most nights before I go to bed, I will lay six strips of bacon out on my George Foreman Grill. Then I go to sleep.When I wake up, I plug in the grill, I go back to sleep again. Then I wake up to the smell of crackling bacon. It is delicious, it's good for me. It's the perfect way to start the day.Today I got up, I stepped onto the grill and it clamped down on my foot... that's it. I don't see what's so hard to believe about that.
