Heat about 8 1/2 cups milk (2 liters), depending on how much bread you use, with a cinnamon stick, a strip of lemon or orange peel (without the white part), and 2 tablespoons of sugar. Stir, and just before it starts to boil, remove from heat. If you don't have a cinnamon stick, you can use ground cinnamon.

Let the milk cool slightly, then pour it into shallow trays. Soak the bread slices in the milk for at least 2 hours—the longer, the better.

Beat 3 eggs. Heat vegetable oil in a skillet. When the oil is hot, dip the milk-soaked bread slices in the beaten egg, then fry them in the skillet over medium-high heat, turning until golden on both sides.

Remove the torrijas and place them on paper towels to absorb excess oil. Then coat them in a mixture of sugar and cinnamon. Enjoy!
