  • 4-6eggs- 2 medium onions, chopped- 2-3 tomatoes, blended- 1-2 Scotch bonnets (pepper), chopped- 2-3 tablespoons vegetable oil- Salt, seasoning cube's

  • Optional: garlic, ginger, and spices (e.g., curry powder, thyme)
  • Red or green peppers

Steps

25 minutes
  1. 1

    . Heat oil in a pot, fry the onions. Add blended tomatoes, Scotch bonnets, and ginger, garlic, spices (if using). Cook until the sauce thickens.

  2. 2

    . Crack in eggs, stir gently, and cook until the eggs are cooked through and the sauce has coated them.. Season with seasoning cube's and salt to taste.. Serve with rice.

  3. 3

    This recipe allows the eggs to absorb the flavorful sauce. Enjoy!
