Crispy Cauliflower Nuggets with Spiced Bean Stew

A wonderful, unforgettable, rich taste of vegetable sauce, perfectly complemented by crispy cauliflower. This dish is meatless, but it is very filling thanks to creamy white beans.

A wonderful, unforgettable, rich taste of vegetable sauce, perfectly complemented by crispy cauliflower. This dish is meatless, but it is very filling thanks to creamy white beans.

Cut the onion into thin feathers. Chop the garlic. Cut the zucchini into small pieces. Divide the cauliflower into florets.

Fry the zucchini in a small amount of vegetable oil until golden brown. Salt and season to taste. Transfer to another container.

Add onion to the same pan. Fry until soft.

While the onion is frying, add salt and pepper to taste and mayonnaise to the cauliflower. Mix well so that each piece is covered with mayonnaise.

Add the spice mix and breadcrumbs. Mix well. Place on a baking sheet in one layer. Bake in an oven preheated to 200 degrees, about 20-25 minutes, until golden brown.

Add garlic, tomato passata, wine and a few more of your favorite spices to the soft onion. Simmer for about 5 minutes until the sauce thickens.

Drain the beans. Mash some of the beans with a fork into a puree. Add the zucchini, whole beans and puree to the sauce. Mix well. Simmer for another 3-5 minutes until the sauce thickens. You can dilute it with a little water if necessary.

At the final stage, add the sun-dried tomato paste and sour cream to the sauce. Stir and remove from heat.

Serve with cauliflower. Sprinkle with herbs.
Tips
Sprinkle with herbs before serving for added flavor.
